The white truffle, or tartufo bianco in Italian, is a fungus that grows underground, symbiotically with the roots of certain trees such as oaks and hazelnuts. Its characteristics are impressive:

 

Appearance: Its skin is rough and ivory-white, sometimes with golden hues.

The white truffle season is limited and occurs between October and December. This is the time when truffle hunters, or “trifolau” in Italian, venture into the forest in search of this precious treasure. Harvesting is an art, as truffles grow underground and are detected by trained dogs.
